Cloves are unopened flowers and come from an evergreen tree. It is used whole in most curries, rice recipes, chai and some desserts. Cloves, in my opinion are one of the most fragrant whole spice. It lends an amazing flavor when pierced carefully on a lamb roast or on pineapple before grilling, in addition to infusing the oils with other whole spices in rice and curry recipes.
