Strawberry and Ricotta Appetizer
This is such an easy and delicious appetizer you’ll learn to love. Blueberries or peach slices are a great substitute for the strawberries.
Ingredients

2 sheets puff pastry, thawed

4 tablespoons ricotta cheese

1 teaspoon sugar

1 cup strawberries, sliced

1 egg, beaten
Instructions
Preheat the oven to 375°F. In a small bowl, mix the ricotta cheese with sugar and set aside.
Roll out each sheet of puff pastry and cut into three strips. Then cut each strip into three squares, making nine squares sheet.
Spread a small amount of the ricotta mixture onto each square.
Arrange strawberry slices in the center of each square.
Bring two opposite corners of the pastry together and overlap them to create a little package.
Place on a baking sheet lined with parchment paper.
Brush each pastry with the beaten egg.
Repeat to make eight more packets.
Bake for about 10 minutes, or until the pastry is golden brown.

Serve warm or at room temperature.
