Sajji Masala is White Jasmine’s newest spice blend. This is an exotic, fragrant and delicious blend of chipotle peppers, oregano, garlic, brown sugar and other delectable flavors. The spice is carefully stored in airtight jars or tins to maintain its freshness and flavor. This is one of our exclusive blends created with fond memories from my childhood. ‘Sajji’ is a staple flavor in the southern part of Pakistan where meats are marinated with the most fragrant spices and then roasted in hot sand for an out of this world flavor. My goal was to capture that exquisite and unique flavor and bring it to your palate; I think we have been successful in meeting our goal.

Sajji Scallops with Penne Pasta
2 pounds jumbo scallops
2 tablespoons White Jasmine Sajji Masala
3 tablespoons garlic, chopped
1 tablespoon ginger, chopped
2 tablespoons olive oil
1 teaspoon salt
2 tablespoons olive oil
1 4 inch cinnamon stick
2 bay leaves
1 medium yellow onion
2 large hot house tomatoes
1 cup fresh parsley, chopped
1 teaspoon olive oil
¼ teaspoon salt
1 pound dried pasta
Add scallops, White Jasmine Sajji Masala, garlic, ginger, olive oil and salt in a bowl. Mix thoroughly. Heat water in a deep saucepan, add 1 teaspoon olive oil, salt and cook pasta until ready. Add cooked pasta to a large bowl.
Heat olive oil in a saucepan; add cinnamon stick and bay leaves. Add chopped onions, fry them until the edges are golden brown, add chopped tomatoes. Add everything from the bowl and let it cook for a few minutes. Add chopped parsley. Add everything on top of the cooked pasta and serve with a side salad.
