Recipes from Everyday Cooking Mixed Vegetable Pulao 2 cups uncooked Basmati riceI small onion, chopped 1 tablespoon cooking oil 2 cloves 1 large cardamom 1 small cardamom 1 bay leaf 1 4 inch cinnamon stick 1 pack diced frozen vegetables (beans, carrots, sweetcorn) salt Wash rice thoroughly and leave to soak for 15 minutes. Heat oil in a pan, add the cloves, cardamoms, cinnamon and bay leaf. Let it sizzle for a minute. Add chopped onions and fry them until light brown. Add frozen vegetables. Wash rice thoroughly and add to the pan. Add salt and 3 cups of warm water. Let it come to a boil and then reduce heat and leave to simmer for 15-20 minutes. Can add a pinch of turmeric for color.
