Recipes from Everyday Cooking Matar Pulao 2 cups uncooked basmati rice1 tablespoon cooking oil 2 cloves 1 large cardamom 1 small cardamom 1 bay leaf 1 2 inch cinnamon stick ½ cup frozen peas ½ teaspoon salt Wash rice thoroughly and leave to soak for 15 minutes. Heat oil in a saucepan, add the cloves, cardamom, cinnamon stick and bay leaf. Let it sizzle for a minute. Add green peas and salt. Add rice and 3 cups of water. Let it come to a boil and then reduce heat and leave to simmer for 15-20 minutes. Can add a pinch of turmeric for color. Serve with meat or vegetable curry. www.whitejasmine.com
